What are the differences with a 'gunsmithing' lathe?

Not every part, just the parts "that provide housing or a structure for one specific, primary fire control component of weapons that expel a projectile" ...until further notice.
Well a while back they were trying to make it so anything which could be used to build a silencer had to have a number stamped into it.

If you were making a suppressor in Texas and trying to get around Interstate commerce, you might need to verify every machine and raw material in the process was made in Texas.

 
like illinoyance said, larger spindle bore, short headstock and rear spider are the main options these have and why theyre attractive to gunsmithing applications
 
If one doesn't mind working with a steady rest, almost any lathe with a long enough bed will work. I have done re-barreling and chambering on a South Bend 9". I have also used other lathes where the spindle was too long for the barrel to stick through, also using a steady rest.
