Tapping stainless

Here is the part, you can see the pierce from this side. I did pull the trigger on a cedarburg handtapper, although they will actually (found out last night) fit in a 3 jaw using the tailstock to center. I may try it with a different tap. Anyhow, I priced them at 4bucks.
 
The hand tapper finally came in, and I did the second half of the parts in an amazingly easy fashion. Now working on a jig for the future. I believe I will have to bore the hole bigger in the tapper table, hard to envision w/o pics, I know. Got about 60 pieces on the first tap.

Are they able to be pierced nearer the centre to give a cleaner hole?
Perhaps countersinking both sides of the hole will prevent the need to open out the hole. A carbide countersink will also remove most of the hard skin preserving the life of your tap.
