Need a gantry crane for a one time use.

I second the idea of a tow truck. 5 ton would not be a big lift for one.
Offer a local guy cash. The rub will be contriving a sling to lift it but for a guy who can dream about having huge rocks around his place that should be doable.

Be not like this guy... Why always the people have twangy accents in these videos?

I'll bet the intelligent being tried to drive that home. Of course, he had no steering, and no suspension. SMH.. but then again, these days it seems that most of the country has this intelligence.

I would suggest some measurements and density guesses. You don't want to be off by 50% on your lifting capacity!

I'm in team telehandler and/or heavy wrecker.

if the ground is soft (farmers field) then a gantry crane is going to sink unless you can spread the point loads of the feet over a much larger area.

I thought drop deck trailer and winch it on, but the rock is probably too wide as drop decks are pretty narrow. How about a tilt deck trailer? That, a 10,000lb winch and some steel or plywood sheet to winch it over should work. Getting it off would be more of a challenge, all depends on if you have an anchor you can run a snatch block to. Or go the "friendly neighbourhood wrecker" route when you get it home.

I watched some YouTube vids on making concrete boulders. all of them were for making decorative boulders that would be light weight. I need the tonnage to stop a car and a shape that will discourage a truck. Making them also required artistic talent to be building something with the vision of the processes and how to use the processes to make the final product look good.

Not far from me is a 3 way intersection. Over the years the people on one corner have been plagued with people not being able to stop on the slick road or not stopping and going to fast. Coupled with headlights shining in the house. They started small and worked there way up with different solutions, fence, small rocks, bigger rocks. Most did nothing for the headlights. Finally they brought in loads of dirt and made a berm. Each pile was a 10 yard dump truck load. They landscaped the piles for aesthetics and to please the local jurisdiction. People still slide off the road but don't make it up the berm. Lights no longer light up the family room.

Over time the owners had enough and eventually sold out.

Winching up a trailer would be easier if you use poles/pipes as rollers. That big rock might need company of some little buddies.

I keep wondering how deep the base of the rock sits below grade. Are you confident it is sitting on grade or is it possible that there is more to it below grade?
