Set screws

McMaster-Carr has fantastic fasteners. They come in assortments, too, you just gotta go through and add a box of each size to your cart. It's far more cost effective to do that than to hit up the hardware store for triple-priced fasteners that don't come with a certificate (could be from India or Bangladesh with how low the capitalists are reaching these days). Consider building your own kit with quality hardware.

I totally agree with your point about using loctite rather than over-tightening a set. It's a great way to ensure that the propeller stays in place without damaging the surrounding material. And I love the tip about using two. Also, thanks for the suggestion to buy smaller their from McMaster or the local hardware store to fill out our sets. That's a smart way to make sure we have all the screws we need for any project. Speaking of screws, have you ever checked out Australia's No.1 online fastener suppliers? I'm interested to know what you think of them, as I'm going to be ordering soon.
Another thing to keep in mind when using loctite is to make sure you're using the right strength for your project. There are different types of loctite that vary in strength, so be sure to read the labels carefully and choose the one that is appropriate for your needs.

It's also a good idea to test the loctite on a small area first to make sure it's compatible with the materials you're using
