Sweet 'n' Sour Cucumbers
peel and de-seed the cucumbers if the seeds are too large.
Cut the firm flesh into batons about little finger size.
Pour some white vinegar into a bowel, dissolve some salt into the vinegar till you think its salty enough, start dissolving raw sugar a bit at a time until you can taste the sweet/sour taste. If the vinegar taste is very strong just water it down a little.
It may need more sugar and salt if you add more water.
Soak (marinate) the cucumber in the sweet 'n' sour liquid for at least 1 hour before eating.
The cucumbers can be left overnight in the marinade in the fridge and when eaten more cucumber can be added to the liquid.

My friend, that was 17 months ago. But thanks for your thoughts.

My vacation with my son in laws side of the family was a great relief from the stresses of losing my mother. However, it was the hardest vacation I've ever taken. Little did I know that estate issues would persist to this day. Fortunately, things are much better with the bulk of the tasks behind me.
