You have 3ish general options:
If it's a permanent connection between adapters & there are wrench flats on both male & female halves, crush type gaskets work well:

If the working fluid is compatible then fancier + loktite are
friggin awesome for a solid & robust seal, especially in high vibration environments:

For transient connections, especially using knurled style quick couplers meant for fingers instead of wrenches, you're pretty much looking for service related HVAC fittings. California's heat wave got me reacquainted with these options but unfortunately, I can't provide measurements for the true o-rings b/c my spares are gone & the manufacturers of quick seal caps/fittings seem to be deathly allergic to comprehensive documentation.
Anyway, here are true o-rings for 1/4" SAE 45° "quick seal" caps/fittings (quick seal & quick coupler are kinda like Kleenex, you can find the same stuff from all the big names in HVAC in addition to the wildly named Chinese drop shippers):

Or if you happen to be using any hoses with quick coupler style fittings (basically 99% of all common refrigerant agnostic charging/vacuum/manifold/gauge sets available today use quick couplers based on 1/4" SAE 45° flares, which necessarily have to perform well under vacuum):

Last but not least, NAPA usually has a pretty good selection of o-rings behind the counter, so you can bring in your stuff & maybe find something that will work. Some Ace Hardware stores have a pretty good selection as well.
