I don't understand why you were unable raise the height-adjust locknuts on the tool holder to lower the tool?
A photo of the setup would help.
Aside from that, the angled cutoff holders suck because you have to adjust your height anytime you change the stickout. A straight holder (get a good one) requires no further adjustment. When parting a large piece I will often adjust the stickout two or three times to preserve as much rigidity as I can. As you cut, the side walls of the workpiece contribute to the support - at least that's my theory, and it seems to work in practice.The cutoff tool holder shown is designed with a 4 degree angle:

Depending on your new lathe, you may need a 0 degree holder to get the blade on center:
