Japanese water stones, 1000, 4000 then a leather strop with jewelers rouge
 
Water stones and then green honing compound with either (1) leather stropping, or (2) use a buffing wheel. The stropping (or use of a leather wheel) will result in a more controlled removal/honing.

Don’t know how it stacks against the fancy modern knife sharpeners but definitely gets the job done.

I recently got an old Tormek wet grinder and leather wheel, and I am very pleased. Old way was a Japanese water stone or an Edge Pro style import.
