Dual voltage motor conversion

I'm converting an old Peerless dual voltage motor from 220 to 110. The diagram on the data plate is still visible, so I'm using it for reference. My question is regarding the capacitor, it currently has one that is marked 220-250 VAC. Do I need to change that it to match the 110 VAC? If so, what size would I need to replace the 216-259MFD one?

There is no need to change the capacitor. The manufacturers supplied capacitor would have been rated in both capacitance and voltage for both motor wiring arrangements unless specifically advised on the rating plate.
As long as the capacitor voltage is higher than the intended use then it is ok to use.
 
Yes, the capacitor on most dual voltage motors never sees more than 120 volts anyhow due to the way the start winding is wired
Voltage rating on motor start capacitors should be equal or greater, not less than
