Yes, two piece jaws allow you to reverse the jaws as well as replace them with soft jaws when the need arises. Well worth the money in my opinion.

I've got an 8" Taiwan made with 2 piece jaws. They fit together so tightly that it is a struggle to get them apart. At least I can always find the reverse jaws.
 
Wouldn't buy a chuck without them.

A 2 piece jaw can be rotated and remounted for OD or ID holding without removing the scrolls . 3 jaw scrolls themselves are not reversable , thus the jaws are bolted on . Soft jaws can be used with 2 piece jaws also . Easily made and true after boring .

Would you need a different set of jaws to grab in side diameter if needed.

On a two-piece, no. You simply unbolt the jaw tops in one configuration, rotate them end-for-end, refit them and you have the other.

Id-Est if the jaws are set to externall, you rotate them end-for-end to get internal.
