My first project

I am needing a shaft collar. I am trying to match some on a pipe bender.
It has a 1" id and a 3" od and is 3/4" thick
I bought some 3/4" x 3-3/8" disc on ebay
My plan is to turn them down to 3"
Where do I start?

Chuck on the large diameter , a length in the chuck as minimal as possible, turn to diameter and then turn the part around and machine off the remainder, then drill and bore the hole.
