Kinda limited uses without the turret, or am I confused?

Both are possible at the same time.
Yes, the usually come with a turret, platen, whatever it's called. And it does make them easier to use. Not uncommon to see them offered second-hand without, kind of like 3-jaw chucks missing one of the sets of jaws. Making one is a good project.
