Brass and Stainless Disks

Online Metals ( http://www.onlinemetals.com/ ) will cut to length, but you'll pay extra for special cuts from any supplier. You'll save a lot of money by buying a larger piece and cutting it yourself (or getting someone to cut it for you for free or low cost - maybe a friendly local machinist?). You might also consider a cheap Harbor Freight handheld bandsaw - it would probably pay for itself in the saved cutting costs.

I'd suggest skipping the hand held. Been there, done that. Going to take you many, many minutes to go through 3" stainless. Far better to use the floor standing saw which has a vise to hold the work. Then you can drink coffee or work at the lathe while the thing is cutting.
 
There is a Harbor Freight outlet not to far away from me so I guess I'll head over there in the next day or two.
My Piggy Bank has enough in it to cover the saw.... The thing keeping me away from it sooner was, I had one about 25 years ago and I went through several gearbox sets and finally just junked it.

I bought (2) 1"long x 3" diameter 1018 from onlinemetals.com. The 1" long pieces were only $5.30ea and the 12" stick was $57 (about $4.80/inch). The extra I paid for the cut-to-length 1" pieces was cheaper than the saw blade I would have used up doing it myself. It's worth looking at.
 
I end up buying a lot of material off of EBay. It may seem expensive, but getting material that is just about cut to size to be worth the extra expense.
 
You might consider making them from plate. Also, LittlemMachineShop has cast flywheels that may offer a good solution as well.
