I see them advertised but don't really know what they're used for, please educate me.

Is it just for square/rectangular material? What are they really good for such that the major manufacturers all seem to offer them.

Two jaw chucks are or were commonly used for handling oddly shaped items such as castings in machines such as turret lathes; I have one that has jaws with a dovetail indent, I read that they were used by making sub jaws to fit the part being machined, sometimes by simply casting babbit metal around the part and fitting the dovetails.
